Monovarietal Pendolino No. 11 is a dance of contrasts: it opens with the green freshness of arugula and freshly cut grass, then immediately surprises with an unexpected, juicy sweetness of pomegranate and wildflowers. On the palate, this is an oil with true character (Fruitiness 6.4/10): the structure is solid, with echoes of artichoke and almond, flowing into a spicy finish where wild thyme and black pepper ignite the senses. This is not a seasoning — it is an experience: fresh, fruity, and incredibly persistent.

The Record:
With 475 mg/kg of polyphenols, it is the most antioxidant-rich oil in the entire I&P Monovarietal collection — a true concentration of health.
The Technical Side:
Despite the power of its polyphenols, bitterness (4.8) and pungency (5.0) remain under control, never unpleasant. Combined with very low acidity (0.21%) and peroxide values of 4.8, this proves that its intensity comes from fruit quality, not from processing defects.
