THE SENSORY PROFILE
Grand Cru La Ramata captures spring in a bottle. The opening is gentle, with a bouquet of wildflowers and fresh almond, typical of high-altitude Leccino. But don’t be misled by the initial sweetness: the heart of the tasting reveals a surprising structure. Vegetal notes of thistle and chicory emerge, closing with a spicy spark of green pepper and fresh ginger. This is a dynamic oil: it begins sweet, turns vegetal, and finishes pungent. A complete sensory journey in a single spoon.
THE SOMMOLIER’S OPINION
Leccino is often considered a “light” oil, but this Grand Cru challenges that stereotype. With 436 mg/kg of polyphenols, it delivers an antioxidant load higher than many commercial Coratina oils!
The Technical Side:
An acidity of 0.23% and low peroxide values (6.2) tell us the olives were processed flawlessly, preserving that distinctive “green pepper” note — a sign of great vitality.
Score:
Masterful balance. Fruitiness (5.4), bitterness (4.5), and pungency (4.6) are almost perfectly aligned, meaning no single component dominates the others. This is harmony, bottled as oil.
