THE SENSORY PROFILE

If you’re looking for an oil that truly has “something to say,” Grand Cru Musignano is the answer. On the nose, it feels like a dive into a wild vegetable garden: the crisp notes of chicory and artichoke dominate, enriched by an elegant hint of fresh walnut. On the palate it is authentic and straightforward. The entry is green, with a burst of black pepper (pungency) that warms the palate without aggression, balanced by a very pleasant vegetal bitterness. This is an oil with a “dark green” energy — less grassy than No. 1, yet more structured and spicy.

THE SOMMOLIER’S OPINION
Not all Caninese oils are the same. This selection focuses on vegetal complexity. The data confirm the purity of the process: an acidity of 0.18% is a clear sign of healthy olives and impeccable processing.

The difference:
Compared to No. 1, here the polyphenols (336 mg/kg) express themselves more through spicy notes (black pepper) than through herbal ones.
